Gyeonggi and Incheon, all within a half-day of central Seoul. Dishes you only get properly on their home ground — raw banded herring at Incheon’s Yeonan Pier, charcoal-grilled fish at the gateway to Ganghwa Island, pine-nut sundubu in Gapyeong, wood-fired whole chicken in Goyang — plus places to spend time, like the spa at Paradise City on Yeongjong Island or Donmak Beach on Ganghwa, which you can camp at. Ganghwa is an island, so a car beats public transport by a wide margin.
