There is a reason a pufferfish restaurant in Busan opens at eight in the morning.

Bokguk — pufferfish soup — is not primarily a delicacy for visitors here. It is what Busan drinks the morning after. Hangover food. Restaurants that serve it open when people need it, which is early.

What bokguk actually is

A clear broth simmered with pufferfish, minari (water dropwort) and bean sprouts, brought to the table still boiling in a stone pot.

The important thing to know: the broth is not spicy and not strong. If you arrive expecting the fiery red soups Korea is known for, this will taste plain. That is the point. It is built to settle a stomach, and the minari gives it a clean, herbal edge rather than heat.

The appeal here: several pufferfish dishes, affordably

Pufferfish carries a reputation for being expensive. This place is the opposite of that — a range of pufferfish dishes at prices that don't require a special occasion. That is what it is for.

If soup alone feels thin, add these two:

  • Fried pufferfish — the contrast against the mild soup is what makes the meal. This was good.
  • Raw pufferfish salad (yukhoe style) — unfamiliar to most visitors, and better than I expected. Pufferfish flesh dressed and served raw; the texture is firm and springy.

Being honest about it

This is a textbook Korean pufferfish restaurant. It is not somewhere to make a special trip for.

What it does is the standard version of the genre, done properly, at a fair price. For a morning in Busan when you need something restorative — or if you simply want to try pufferfish once — it is a safe choice.

Is pufferfish safe to eat?

Yes, and this is worth understanding rather than worrying about.

Korean law requires a separate national licence to prepare pufferfish. It is not a fish any kitchen is allowed to serve. A restaurant operating openly under a bokguk sign is a licensed one, and the dish has been part of everyday eating in Busan for generations.
