Places across Korea — Seoul, Jeju, Busan and more — the talked-about ones and the ones that just drew me in, visited in person. No star ratings: price range, how to order, how to get there, and when it gets busy.

A pork grill house in Daejeong-eup, Seogwipo, Jeju, a little way from Moseulpo Harbour and near Hyeongjeseom Island. You pick belly or neck meat, from regular white pork or Jeju black pork, and dip it in meoljeot, a gochujang-style sauce or salt. Staff trim the meat with scissors and grill it for you. The location looks awkward, yet the place is full at dinner.

A Hong Kong-style dim sum restaurant on basement level 1 of Times Square in Yeongdeungpo, Seoul. I ordered soup dumplings, black har gow, stir-fried water spinach and a Hong Kong-style clay-pot rice with pork and mapo tofu, with a black tea beer on the side. At a Chinese restaurant I always agonise over which dish should anchor the meal, and this day I meant to eat lightly and walked out full.

A taco shop in the food court on basement level 1 of The Hyundai Seoul in Yeouido. It is easy for a quick lunch, and you choose the main filling (the meat). My pick is the birria. The crisp, lacy edge of baked cheese stands out, and even the instructions on the box lid are fun to read.

A set-meal restaurant in Ido-dong, Jeju City. Abalone stone-pot rice, a stew of your choice, soy-marinated crab and stir-fried pork all arrive on one table, which makes it very good value. There is more abalone than I expected, and the abalone innards soak into the rice. Expect a wait at mealtimes.

A large bakery cafe inside the Ui-dong valley below Bukhansan. It is big, nicely designed and popular enough to need a wide car park, in an area that gets crowded on weekends. A good stop for a cup of tea and bread from a master baker.

Lee Jaemo Pizza, famous in Busan, has a branch in Jeju too. I've been to the Busan shop as well, and the impression is the same — a classic pizza that sticks to the basics. Above all, the cheese is really good and full of flavor. The default is the cheese crust pizza, and since the price gap between small and large isn't big, I recommend the large. I rarely get to Busan these days, so I stop by whenever it comes to mind in Jeju.

A restaurant that specializes in uni (sea urchin). The main dish is the uni rice bowl (uni-don), and there are also sea urchin bibimbap and seaweed soup. The uni-don comes in small and large, priced by the grams of uni. Even the large wasn't enough for someone who loves uni, but I enjoyed uni that was sweet rather than salty. They gave only one sheet of gamtae (a fine green seaweed), and extra has to be ordered separately. They don't sell alcohol.

A haejangguk (hangover soup) spot that started near Hamdeok Beach. Coming back after a long time, I found it had moved to Jocheon, into a handsome new building. The signature is the offal soup (naejang-tang): a hefty broth with fresh offal, wrapped in a perilla leaf with salted fermented fish, and it tastes great. It brought back fond old memories. One thing to note — there's no takeout; you can only eat it right there.

Hamdeok Beach on Jeju's northeast coast. With plenty of places to stay around it, it feels fairly touristy these days, and the walk up Seowubong right next door makes an easy follow-on. I saw quite a few Koreans and foreigners on month-long stays, and the sea really is a lovely emerald color. It's on my own list of places I'd like to try a month-long stay someday.

A haenyeo's house on Aewol's coastal road. When I want something simple in Jeju — not a full sashimi meal — I stop in and somehow always walk out having eaten the seafood spread. Coming back after a while, the price felt like it had crept up (60,000 KRW). That day only the rock sea squirt was a bit small; everything else tasted like fresh sea, as always. Still a bit hungry, I added a bowl of seafood ramyeon, which comes with a whole live octopus and a large abalone — worth the price. It's an old place, and these days you see plenty of foreign tourists too.

Maksseorihoe Seodaemun — Skip the Premium Set, the Lunch Set Is Enough

A sashimi restaurant a very short walk from Seodaemun Station. I meant to order the lunch set, but ended up with the premium set, which comes with a bit more (30,000 KRW per person for the lunch set, 40,000 KRW for the premium set). It's not a place with a huge spread of side dishes, but the aged sashimi at the center of the set eats well for a lunch. The private-room layout makes it a good spot for a quiet lunch with friends — though having tried the premium set, I think the regular lunch set would have been enough.

A tonkatsu specialist in the basement of Yeouido's TP Tower. The original location sits between Hapjeong and Sangsu, and branches seem to have multiplied lately. The roskatsu and Chateaubriand katsu are both solid, but this thick-cut Japanese-style katsu format is everywhere now, so I wasn't blown away. Still, whenever tonkatsu crosses my mind, this place comes up — purely because of the menchikatsu. The thickness of the meat paired with the demi-glace sauce is unusually good.

Right outside Exit 6 of Yeouido Station, a taco spot that's easy to grab something quick and filling from. It's a franchise with several branches, worth knowing going in. The menu runs on tacos, poke bowls, and burritos, with set menus built for two or three to share. The ingredients are fresh and the food is solid — pair it with a lunchtime beer and it's even better. Personally, on a day I have no appetite, I'd reach for tacos over a burger.

A beef tripe hot pot (gopchang-jeongol) spot in Yeouido — the hangover soup is quite good too. If Cheongeoram in Mangwon-dong is the clean, value-focused, vegetable-broth version, Jungang Haejang is the premium side — the tripe itself and the overall taste are a level up. Prices are noticeably higher than Cheongeoram's, though. I first fell for it at the Samseong-dong original, so a branch this close to Yeouido is a welcome surprise.

A restaurant in Jumunjin, Gangwon that comes to mind as soon as the weather turns cold. I had bokjiri (clear pufferfish soup) and grilled fish. Most people here order the cod soup, but Seoul already has plenty of good cod soup spots, so I come here specifically for bokjiri — something harder to find back home. Most of the menu is good, and it has a home-cooked feel to it.

A grilled pork skin (kkeopdegi) specialist tucked down an alley in Mangwon-dong, a bit removed from the busier part of the neighborhood. If you like kkeopdegi, it's worth the visit — they do it well. Most people start with raw pork neck (saengmoksal) and move on to the pork skin, a pattern similar to Mapo Sogeumgui. Worth knowing there can be a wait.

A makguksu (buckwheat noodle) shop in Yangyang, Gangwon, that I assumed for years was the original location. Turns out the real original is elsewhere in the same county, on Donghae-daero. Whenever I'm on a Gangwon trip, I make a point of stopping here on the way in or out. The buckwheat noodles and the house sauce are a perfect match, and adding suyuk when there's room makes for a satisfying, happy meal.

I don't eat haejangguk (hangover soup) much in Seoul, but somehow I crave it every time I'm in Jeju. I've worked through most of the famous haejangguk spots here. Today I ordered naejangtang (offal soup) at Daechun Haejangguk, and it suited my taste better than the plain broth. Jeju-style haejangguk isn't right without a generous scoop of minced garlic stirred in.

A Western restaurant near Jeongdong-gil with a charming, plant-filled atmosphere. There's a lunch set, but this time I ordered steak and pasta. The setting is good enough that almost anything would taste good here — the food itself wasn't spectacular, but I still enjoyed the meal. Good for a walk along Jeongdong-gil and on to Gwanghwamun afterward.

A bar inside an old converted house in Sangsu-dong, close in spirit to a Korean-style izakaya. The makgeolli lineup is wide enough to compare several side by side, and the anju menu spans several categories too. The food isn't spectacular, but it's solid enough to pair well with the drinks.
